Americana Casino: go to the Bennie Jack's BBQ Shack. Go upstairs. Find the square-shaped chandeliers and jump over to the first one. After that you just jump chandelier to chandelier and at the end you can find a dose of Zombrex.

Slot Ranch Casino: go behind the stage . There are a lot of boxes and crates here. Just climb up to these and you can find Zombrex there.

Underground: There is a Zombrex on one of the ramps. It's just simply lying on the ground. If you watch the map: it's about under the Atlantica Casino.

Yucatan Casino: Go to the Lucky Marble minigames. Climb up to the top and there you will see a Zombrex and an LMG. Just jump over and pick them up.

So there are four hidden Zombrexes in Fortune City. If you find them all it will be enough for anyone in the game.
