Although the Japanese show was awesome, I like Iron Chef America because it deals with ingredients most Americans can get and helps with new ideas with those ingredients.
The chefs are given the heads up on the secret ingredient before the show. Thats why they just get right to it with no discussion between teams. Its kinda cheezy that they dont tell the audience but its true. Sometimes they know days ahead.
Love this episode like how the Chairman raises the knifes and shouts "WILD BOAR!!!" then quickly turns to look at the audence while holding the knifes.

What a boring show. As much as a guru Alton Brown is, there is no banter or interesting conversations to listen to since he's just talking to himself.
Gordon Ramsay is one of my favorite Chefs. I'd love to see him battle on this show. Even better would be to have a 2 on 2 battle with him teaming up with either Flay or Morimoto.
But to be honest, Gordon Ramsay is too good a chef to be a challenger...he should be the Iron Chef of French/Italian Cuisine on this show.
@GillesGerais Well it depends...yeah I agree Morimoto is probably the only one whose overall skill is at Ramsay's overall skill level...but let's say we had Flay vs. Ramsay and both were cooking French Food...of course Ramsay would win, but if they were both cooking Southwestern Cuisine, I'd put my money on Flay. But overall yeah I'd put Ramsay a little bit ahead of Flay, and Morimoto about on Ramsay's level. All 3 are master chefs, though.
I've read about what goes on behind the scenes on this show, and I've seen many episodes. Based on what I've seen and read, pretty much nothing is "prepped" like in restaurants before meals (i.e. there's no pasta pre-made, nothing is chopped up already, and all types of dough (except for those that need to be chilled for a while) aren't pre made).
We always see the food prepped by the chefs DURING the battle, not before. Sure, some parts are staged, but the prep is done during the battle.
I suspect that they are given a list of possible items for secret ingredients. They both create their menus around that list, but they really don't know what the actual "secret ingredient" is till recording day, once it is revealed they just go on with the menu they have prepared prior to that day, that is why they all know what to do .....that is at least what I think. : )
@etrnlygr8tful i want to believe that they know before hand what the ingredient is cause the stuff they come up with is so amazing its like they planeed it all out. if they really do all this on the spot i can honestly say that they are masters of their art and surpass regular chefs by far.
They actually get 15 minutes to come up with a menu after the secret ingredient is revealed. They just edit that part out and don't really mention it.

Knowing him as the chairman did make it kind of funny.. but then his schtick is so over the top anyway that we do impersonations of his "alea cuisine!" thing in my family - he does the chop and then he magically leaps back and turns around while looking zen- freaking hilarious.

@mchan2048 Almost correct. They don't know the ingredient beforehand. They have producer assistants buy ingredients from a list given to them by the chefs based on the list of possible Secret Ingredients.
The chefs can usually guess what the secret ingredient is by the other ingredients bought.

The food network did a behind the sceens once and they let it be known that the chefs already know what the secret ingredient will be and they get a chance to plan. Also, after the prep period we see they get time to set up all the plates. But we don't see all that LOL
but they are professional chefs and most of them have a successful restaurant with them. And so it goes, they may get time to set it all up, but they get only 1 hour to make all their dishes while they get filmed though =)

Both America and the original are awesome for completely different reasons.
The American version has better secret ingredients and to be honest, the food and banter is brilliant :D
But the original had the charm, the way Kaga looks over his stadium, the FUKAI SAN!! and the "If memory serves me well" makes it iconic :)

Wild game is the absolute best meat that one can eat.
All naturally fed, better taste and most importantly, no potentially disease-causing hormone dope in it.
Downside: all those benefits come at a higher price.
But if one can afford it, damn it's good!
