Does the whey of the kefir contains protein? I make mine in the fridge for at least 4 days (I have a lot of grains... about 500 grams for 2 liters of milk)... but it never gets thick to stay in the spoon and the whey always separates from the curds. Might be because the milk is too thin? I use raw milk (bought from a vending machine at the hipermarket). thx
@viparitakarani33 Yes, whey contains protein. In fact, the traditional way to make ricotta cheese is to boil the whey that separates out of cultured dairy. The heat makes the dissolved protein precipitate out of the whey, and that's ricotta cheese. I think yours is separating because you're using too many grains for the amount of milk. You need only 1 T of grains per quart/liter of milk. You're using almost 1 cup of grains per liter. (I hope I got the conversions right.)
