If you loose all electronics, you are in "Mechanical backup" and only have control over the horizontal stabilizer and the ruder, provided you still have hydraulic pressure. I don't know about the engines but the FADEC should be inop as well so that will be an issue.
The chance to have this level of malefuntion gladly is almost impossible. Nevertheless your comment is inappropriate in my opinon.

Has not necessarily to do with ETOPS. An ETOPS certification allows you to fly routes with an alternative airport within a certain distance like over an ocean for example.
Being able to remain flying in an engine out situation is a totally different story legally.

It's funny nowadays, the runways on the displayed airport LFBO (at one point in the video) are 34 (R & L) and on the video it is 33L.
LFBO is Toulouse and the TOU vor is 117.7
I fly this on the simulator.
