Looks like easiest way to do the bodywork would be to start in small areas with chemical stripper... Thats how i am doing my 66 e 100 and it seems to be working :-)
I had a 53. It had a 6 volt positive ground electrical system. I put a converter in it back in 1976 to run my 8 track but had to lay it on a piece of carpet on top of the engine cover. It slid off a couple of times turning a corner and lit up the whole van frying my speaker wires. Crazy!
Note that I think yours is newer than that. They didn't have the opening in the front for the radiator cap until about '57. You can't see it but my radiator cap is inside the cab! The four-speed on the floor came out of a wrecked '57
Anyway, good luck with it. You won't be disappointed! Keep the 235 Cu In 6. Note - Toyota Land Cruisers had the same engine.

I have one too. Real short wheelbase. Gas cap notched. Plan on slamming it and leaving the 235 stock and not touching the ratty paint job. Floridaroadkill makes windows for these...
Hey man I saw something interesting on Ebay not sure if it's still there, but I ran accross a Diamond T Cabover Bus it was really ragged out but pretty neat.

I have that exact van. Some shithead stole my front grill. That chevy grill isn't original, but it is a good replacement idea.

I would leave the rear axle the way it is in the vid. It looks good that way. Just paint and repair the bad stuff.
