I've attempted to do it by chopping and just rotted. Didn't work.
I think you need it to be moist, but not soaked. Maybe try pressing it down more and harder that should help to release more of the water.

From my research, rotting occurs due to exposure to air.
The bacteria in fermentation are anaerobic and rot when exposed to air.

hmmm...I used a giant cabbage for mine, and it's been fermenting for a couple of days...I wonder if that might ferment slower? It seems a bit dry...I chopped it though because my juicer sucks...
