depends on the size of the brisket, just keep adding coals as you go, keep in mind if u have a large piece it can take 8 - 10 hours... make sure you are cooking with indirect heat! i keep my pit at 225 throughout the whole process until the meat registers at 180 degrees, then i kill the heat and put it in a texas crutch untill it reaches 190 degrees so it falls apart in your mouth, google "texas crutch" for more info. but great video by the way, looks great
