@lovemewhenimbroken They haven't assembled anything, and as one other comment points out, they don't show you the wheelhead, which will probably be a commercially available wheel instead of something home-made.
Since I just spent the last week or so looking at v-belt pulleys, gear ratios, motor speed, etc., I don't think their wheel is going to work. It's going to spin WAY too fast on all but the lowest speed. I hope I'm wrong.
what do you use for the wheel head

I used a direct drive system with Linemaster's AC Variable Speed Foot Control. (part#980-SC3)
