Personally I love the pigs head roasted because the ears and skin gets so crispy and nice. Could I then remove the meat and use to make head cheese? And is the only way to preserve head cheese is by freezing?

Not really but water with some flavor should work.

If you like mushrooms, I will make a mix of water with them.

Pigs feet are the best, because they generate the most gelatin. I personally prefer chicken.

wow I have never seen it made from a whole hogs head My mom and aunt make it from pig parts I love it...
