  • People have to understand that not all west indian people cook the same way for the same dish.

    It's good to improvise and not to worry about experimenting with your food.

  • Curry goat: lots and lots of garlic (pasted down). Goat is a tough meat and needs to be cooked for THREE hours minimum. Oh, and the peeps who keeps saying ketchup is a 'UK' ting - it isn't! I'm mixed race and my dad (Jamaican) NEVER used ketchup and neither would I... I mean, that's just nasty man... Tin of chopped tomatoes at least!! LOL!

    Which part of the goat would any of you say is best for curry goat though?

  • For an authentic AND practical version of curry goat search for the Tropical Sun version with Chef Collin Brown...you gotta use everyday ingredients that are easy to store and easy to find in the shops....1love.

  • I put a little ketchup in mine, it balances the pepper a bit and helps enrich the sauce. Never had it with potatoes or carrots, but most families have a variation on the recipe. In these healthy eating days, I don't brown off the meat, but bring to the boil then cook it down slowly on a low heat with all the seasonings, a tbsp of ketchup and water. Makes a very tender curry. Not how Mom taught me to make curry goat, but less oily and recipes are adapted all the time.

  • Mate I am an Indian fron Fiji (check the map) and I am a Gujerati...mate our cooking is kinda similar but also very different in that we would never put carrots in tour goat curry...but major hapinniess to all our brothers and sisters who have been uprooted from our motherland and flavoured the world.   • listen all my life of cooking curry goat and watching my granny cook teaching workers how 2 cook never c ketchup in curry goat meat must b seasoned properly first b4 even putting it in the pot first of all the meat depends on the kind of goat tends 2 be very renk yes pissed on by the goats so the meat must b washed and seasoned properly, need original yaard recipe link mi jamaican decent and an excellent chef/cook goat must tek di seasoning 4 the true flavor carrots take the taste away try it

  • video is okay but the buffoon who started having a seizure cus his partner was putting in too much water ruins it. id someone not tell that fool that in a cooking demo, it does not need to be perfect expecially if you are switching out to a different pot, which is what happened. For that buffoon to show that frustration in the water, even if only for a sec, shows how unprofessional of a cook he is. What an idiot.

  • I went to borough market next to london bridge,they had jamacian curry chicken,that had carrot and french beans but cooked aldenti,it was the best curry i've ever tasted and i've had quite a few.

  • we tend to put ketchup in everything. yes man we put carrots in curry along with potatoes but dont put the ketchup unles u are obsessed with it. ketchup with curry is only for ketchup lovers

  • I'm Jamaican and I'd never add ketchup to my curry. also, I'd season my goat first for an hour or two before browning it and adding water.

    I guess everyone cooks differently!

  • Well I've been eating curry goat most of my life and never put carrots in it so I guess everyone is different. I usually pre-season it with garlic,ginger, thyme, curry powder, garam masala, tumeric, coriander (powdered), leave to marinade. Brown it off in a little oil, lower the heat and leave to simmer for about hour and a half then about 15 mins add fresh onions and more thyme and a few slices of scotch bonnett peppers for the kick. Add fresh coriander at the last.

  • Curry Goat is one of my favourite dish. I have cooked this dish many a time.

    In my experience, for the best result the dish is cooked in a pot using slow heat over a couple of hours. Does anyone agree?
