the purpose of it, is to safe the fish from a slow death. rather than giving them a smack on the head, which will not kill it but sending it in to a coma and have a painful and stressful death. this will be the best way. and the fish stays fresh too.

神経絞めを行うと魚の神経細胞を破壊し、死んだ後も魚は自分の体が
死んでいると判断できず、死後硬直を遅らせる事ができるため、
普通に絞めるよりもはるかに新鮮に魚を持ち帰ることができます。
