keep it simple Fattoush is very easy it is a simple salad with bread in it that's it basically
lettuce + cucumber + tomato + green pepper + dressing ( 2:1 oil : lemon + crushed garlic + salt&black pepper some people add Sumag + splash of water to make the dressing lighter)
some people add spring onion or white onion and some fresh herbs like mint and parsliy and cilantro to the vegetables in the salad or dried herbs in the dessing)
I am not sure too but I think she was refering to a brand which is called old or all spice!!! I will give it a shot and see it works with black pepper
also, the crisp bread was a nice modern touch. did you know that in northen italy they typically top salads and pastas with fried breadcrumbs, because their ancestors were poor and couldn't afford cheese. Makes a lovely crunchy touch to a dish :)
I agreed . In the poorer districts and countryside , the poor farmers and lay person used old sour bread into breadcrumbs by roasting it till it becomes hard and brittle.
It was later pounded and added to salads , seafoods and even pastas.
