    you can add orange food coloring to the butter and then your knafeh will become orange in color, but i prefer to broil the top so it becomes toasted and brownish in color.

  • @shangaize, You cannot find Akkawi cheese at the middle eastern stores in Australia? if not, you can always use Ricotta cheese mixed with Mozzarella cheese to use instead of Akkawi cheese. Akkawi cheese is white arabic cheese that is soaked in water to get rid of the salty taste in it. so basically you can use any white cheese that has very low or no salt. you can use the same method for Knafeh dough by mixing the Smeed with butter and spread it in the pan then fill it with cheese and bake it.

  • @Motez19 , the reason my knafeh is not Orange in color is simple...i never use orange food coloring in it, i like it naturally colored when its baked, to me, the orange color looks so artificial :)

  • @Motez19 , you can make it with Ricotta cheese and Mozzarella cheese :) or you can even fill it with a mix of crushed walnuts, sugar, cinnamon and very little nutmeg, bake it then add the sugar syrup to it. serve hot .

  • dokkameyya, not this type of kunafeh is turned upside down. this one was baked in the oven and it was cooked from the bottom and then broiled from the top, so it is cooked from both sides and served right out of the pan. thanks for coming by.

  • Hi Summer, this is a different Knafeh than the one we see at restaurants!!! why is it not reddish????

  • i did not add any food coloring to it, that is why it is not orange in color like the commercial one...this is real home made knafeh and it tastes like it. :)

  • back home in Lebanon we do not add color to it..the palestinian makes what they call Nabulsi Kunafah and it is normally reddish..

  • In most countries this dessert is prepared, orange coloring is added, even in Lebanon. i find it better with its golden colored obtained from baking only...i do not like the orange food coloring.

    I do not add any food coloring to it...it is orange food coloring you can get anywhere...i think if you bake it well it will turn into nice golden color you would not miss out on the coloring at all. good luck!

  • yslemo hadyat , ok can you show us how to make akawi cheese where i live there are no arabic stores , i make it with ashta mtboka , it is delicous too, also i tried it with you know when you put vinegar on the milk and u get that cheese. also good try it , wow we can get creative when we are deperate for a taste from back home :)

  • here is Oush el Bul bul recipe, i hope this is what you mean by the name of the recipe:, again it is in arabic and i hope you can read arabic, if for any reason you cannot, let me know and i will translate it for you:

    1/2 pack Knafeh dough-2 1/4 cup sugar-2 cups whole pistachios, shelled-Ghee or butter -1 cup water-1 1/2 teaspoon of lemon juice

    الطريقه:

  • - نضع السكر مع الماء وعصير الليمون في قدر عالنار ونتركها لمده 8 الى 10 دقايق لتتكون الشيره.

    - نضع الفستق في صينيه ثم نصب عليه قليل من الشيره ونحرك ثم ندخل الفستق للفرن على درجه حراره 190 او 200 لمده 5 دقايق.

  • - نقطع شعيرات الكنافه ثم نلف مجموعه الشعيرات على اصبعين بشكل دائري حتى تشكل حلقه ثم نضع في وسط كل حلقه حبتين او 3 من الفستق.

  • - نضع كميه من السمن فوق الكنافه ثم ندخلها الفرن على درجه حراره 200 لمده ربع ساعه الى ان يصبح لونها ذهبي وبعد ان نخرجها من الفرن سنجد ان هناك كميه من السمن الفائض فنتخلص منه.

  • Gimme a plate of that :) hehe. Kanafe and baklawa are my fav. mediterranean desserts. Its crazy how much butter goes into these things. I recently made kanafe w/nabulsi cheese.... but I don't like how nabulsi and akkawi are packed into brine... its still a bit salty even after I rinse it a couple of times.

  • royalxsweetie, you need to soak the nabulsi cheese for couple of days in water and change it frequently, but with akkawi cheese, you need to soak it for an hour or so, also changing water frequently. but it works fine with ricotta and mozzarella cheese too. sahtian!

  • Summer, if i want to do the one layer of knafeh dough which comes on top only, how do i cook it? do i only do the layer on the bottom of the pan then cheese on top, and when its done cooking flip it into another pan? ive seen people do that, or do i do cheese on the bottom and dough on top and cooking and serve in the same pan? thanks much

  • bintkan3an, some people call my recipe on the video, bain narian, because it has bottom and upper layer of Knafeh dough, but the traditional and original recipe calls for ONE layer of the dough, in the bottom of the pan, topped with cheese and cooked on the stove top then inverted to another pan.

  • It's the name of the cheese, it will say it on the package. The package and cheese will be round and you can find it in the freezers or refrigerators at Middle Eastern stores.

    akkawi cheese is a type of white cheese that is prepared with salt and made into molds. i think the origin of it is from Akka the Palestinian city by the coast.
