I recommend painting the trim one coat before installing.. If staining you have to paint first. Might want to leave gap at bottom of jamb for floor covering.
The shimming and leveling portion of installing a door can be a real pain. Use door installation brackets available from home depot. Same cost as shims. They eliminate the need for the shimming portion of the installation and you dont need to nail through the door jamb(door frame), so no nail holes to patch. Same cost as pack of shims but way easier. click on my youtube name to see more. Im interested in what you think. We have DIYs and pros installing 1000s of doors with them.

Um. Wow. I do it so much differently. My mouth is hanging open. So if the floor isn't level, you don't care? People where I live notice when the door is tilting. Maybe this isn't really a real "how video". Maybe, you're just practicing video production with voice over and the subject matter is inconsequential. I just guessing...

Have you ever tried using brackets instead of shims? I just ordered these things online called ez hang brackets that replaces the shims.
