  • it took that long to learn to cook rice because it was over a fire in a pot. after the invention of the rice cooker my niece can make good sushi rice.

  • you don't have to make the special rice if you think it will be too hard. For me as a fellow korean like phillip yi here, I think the rolls still taste good just with regular white rice. obviously if your making nigiri sushi then you need the sushi rice but at home your fine with basic rolls like CA rolls and spicy tuna rolls and such.

  • Some chefs take 3 - 5 years just making the rice. That's crazy.

  • I think its pretty ingenious of him to have this show to steal new techniques and recipes for his own restaurants. You notice he uses non practical ingredients all the time to try to win. Its all a cover for his true intention. If you know his background and been to one of his restaraunts you would know what im talking about.

  • Sushi is probably the only savoury food category that's kinda like baking. It's a precision art. While there's a variety of different concepts, the basic premise remains the same and it bends for no one. Sushi's either perfect or a cheap knock-off. There's a reason that all professional Japanese sushi chefs train for practically decades to perfect their craft. The average sushi chef trains for 3 years just to make rice; a seemingly basic and mundane ingredient turned into Picasso. That's insane.
