If ou haven't gotten any solutions as of yet, I think that this might help you a little, although it isn't the perfect solution. Some MIDI-keyboards/controllers have split-options, but assuming yours don't, you could add some MIDI-effects on your different tracks.
Have the different tracks "ignore" (don't play or simply mute) each key you don't want to use (sort of a cutoff-filter for MIDI), and give them all the same MIDI-input. That should work.

Nice idea... the DSP delay between input and monitoring seem to make you record progressively later. The main backbeat became quite sloppy and cluttered after several layers....very tuneful melodies though.
It can be hard starting a project with so many ideas in your head. Your videos keep my head right with a "Off the top flow / Work it out as you go" feeling.
