I have successfully canned (and eaten) boneless chicken thighs. In the Ball Blue Book they say you can can a whole chicken cut up, bones and all. If you can bottle red meats like beef, lamb, or Moose (as mentioned in the above video) dark meat chicken should be fine.
what people also can do is Sell things that they dont need anymore and use that money for their food storage. Only people who dont have enough money to set up a food storage for a year.

And no, you don't add liquid to the chicken. I do add a little broth to the ground beef that I bottle. But that is a bit different as I precook that, before processing. For the raw pack, like the chicken, I don't add liquid, the chicken has plenty of it's own liquid.

Can you "can" dark chicken meat too? Does it have to be boneless? thighs are easy to find on sale. yuo don't add any liquid to it???
