I wish the blue cheese melted completely smooth on top of the steak instead of retaining its crumbly character. I remember Applebee's had a blue cheese on steak dish that I loved, the blue cheese melted so smoothly. I don't know how they get the blue cheese to melt so completely like that. Perhaps it's not pure blue cheese but rather some sort of blue cheese sauce? But I took it to be pure blue cheese. Please tell me how to get blue cheese *completely* melted and flat on top of steak .
@yowzephyr Applebees would definitely be using a blue cheese sauce, as opposed to real blue cheese. What I have noticed, however, is blue cheese, or in this case gorgonzola, cut into slices from a bigger piece melts much better than the crumbled stuff. Give it a try and tell me what you think. -Kirk

I went there again and it was no longer on Appebee's menu. But the waiter said he could ask for it to be served to me nevertheless. So I ordered it again. But it wasn't the same. Not as good.
That one magical blue cheese melt on the steak I experienced at Applebee's. Alas, I think I will never be repeated for me again.
@yowzephyr Unfortunately I never tried that sauce, so I can't really help you recreate it. See if you can find it online. It's amazing what a Google search will turn up. It's probably a fairly easy sauce to make.
@Egcuisine Wow. You're right on. I googled it and got the recipe. And yes, it's a very easy sauce to make. You just blend together 2 tablespoons of butter with 6 ounces of blue cheese until creamy.
@yowzephyr I haven't checked out the recipe that you're referencing, but one thing's for sure. When you heat up this sauce be sure to do so over a low flame. When butter and cheese get too hot they like to separate.
@Egcuisine Soon after I posted my question I remembered the smoke point factor. I then figured that was why canola oil was recommended. You have confirmed that for me. Thank you. I guess I'll go with the smoke.

@MUSTSEEVID Chuck steak is great, especially if you're making chicken fried steak. I can do a vid somewhere down the road. For now, just know that you have to pound it really good in order to tenderize it. Dip it in a little seasoned flour, then in a little buttermilk mixed with egg, then back in the flour. Shallow fry in oil till it's golden brown and you're good to go. Gotta make a little gravy with it as well.
That's a great looking steak, and I bet it tasted lovely but under 15 minutes - I think not. Closer to 20 - 25 minutes realistically if you factor in the seasoning, aplication of blue cheese, cutting, garnishing and longer cooking times quoted. Very nice though so thanks.
