That is indeed maple too! You are correct, some woods do it much easier than others. Also some woods will do it easier in different grain orientations to. So, there is lots of practice there.
If you think your technique is correct and you are still having trouble, the knife is probably not sharp enough. A normal "factory" edge won't cut it :D Too thick of a grind is often the culprit.

This is literally impossible with madrone or manzantia, regardless of how sharp your knife is.
