They do have stings, they just don't use them unless you threaten them.

Sammy hasn't been seen for about a year, but a new turtle is now often seen at the same site and is far less agressive!

also known as Sammy the Psycho (a far more appropriate name IMHO!). Sadly, when I was there over Easter 2008 he had not been seen for some time.
