Same concept as the TV weatherman's "Green Screen" The Vampire is shot against a green-screen which allows him to be easily cropped ( A technique called Chroma Keying). The process allows him to be simply overlaid onto the video feed of the security camera. An engineer is doing this in real time, and simply cuts the feed when the person looks.

I think the others were first...and that the knowledge for the vampires characteristics would have come from the books. So, your first statement was what I was going by.
