you cant compare the wine cooking methods of hundreds of years ago with the way they cook it today. the way they did it then, ruined the wine. the way they do it today (fast), doesn't.
The problem with non-mevushal wine is that, if you're a BT in training who keeps kosher but don't yet keep shabbos perfectly, you can't drink it because the second you touch it it's treyf!
