I'm not an expert, but I guess the difference is mainly in the authentic sound the gypsy guitar gives. They also appear to have a slim neck, which I believe comes in handy for high speed playing.

a gipsy guitar is like an 100% acoustic archtop. Lot of these guitars have a high action and are hard to play if you are used to a normal guitar. You should try one. You will hear the difference.

hi! ich wollte dich nur darauf aufmerksam machen, dass - noch viele jahre bevor du überhaupt geboren warst - der komponist dieses stücks dasselbe mit einem gitarristen namens george benson aufgenomen hat. und wenn ich mich recht entsinne, war es in der originalaufnahme keinen deut langsamer und doch wies es keinerlei fehler auf...

I made mistakes when was typing the video description because, I upload this video with others of the same album, and edit the information for each one very quickly (coping and pasting).

Romane is another very master of the guitar, but he plays on other song of the same album.

Personality, I recommend «Minor Swing», which is one of the best songs of this album: Gypsy Guitar Master.
