There is Star Wars Jedi Knight Jedi Academy. It's an old game, but has good graphics and gameplay. It's even better than TFU. You're able to cut arms and legs off, and use the lightsaber to burn them and cut them up a lot.

i have a custom firmware. i downloaded the game from the web and put it on my psp. it is one of the best games on the psp. i recommend it to everyone

I really think this is going to be the best starwars game out there in the history of starwars video games. The only thing that puts me down about this is that when you slice with your lightsaber against enemies they don't get their arms torn off or other parts.
