I'm pretty sure thats not the critical point, though it's close. When you hit it the phase boundary disappears, and the fluid becomes all murky. Its hard also to maintain, normally you miss it (which I may have done at a given point in this video) Still it looks pretty.

it looks pretty interesting when its smaller. when looked at when its being played at a big TV it looks kind of boring, but when like this, with music under it, it looks a bit like art.
