my personal logic behind katas is that they are made up of techniques that are used in defense situations rather than sparring and should be practiced. Katas are also more traditional. This one is demonstrated slower than usual, so yeah, the sensei wouldn't move like this in a real fight, but if he did it at full speed, then perhaps he would and the movements would become useful. How come forms and katas never come into play while sparring? No one would move like this in a real situation.
