'never wash it' was bugging me too untill I read this on the website of Food Stanart Agency - Don't wash your turkey (or other poultry) this is because bacteria can splash onto worktops, dishes and other foods. Proper cooking will kill any bacteria, so you don't need to wash poultry.
I don't understand why your not supposed to wash it. Always washed my turkeys thoroughly with cold water under the tap before stuffing / cooking. Anyone care to enlighten me? or is this a load of BS?
