That Vulture is in the actual game so he isn't a boss. It's one of Lankies Bananas in Angry Aztec. You have to shoot it a number of times for it to drop the Golden Banana
Awesome video, though I'm fairly certain that mechanical fish isn't beta. It's the one where someone pressed a switch to make it appear and Diddy had to swim into its mouth (hence why it pauses) before the timer ran out.
I remember because it was the last Golden Banana I had to collect.
The orange Kremling model is definitely a Re-Koil enemy from Donkey Kong Country 3 - he would spring up and down on his tail but it's obscured by the ground here. I guess he would have been just a standard Kremling enemy like the others in the game, though his model does look quite big when compared to the rest. Interesting!
@Koshizu Looking at some DKC3 videos, it probably is the Re-Koil enemy from that game. What really stumps me is it's size. Most Kremlings in DK64 are about Chunky's size, but this one is huge. The only characters that are this size are mostly characters in cutscenes, since I spawned Snide in the room and he's about the same size. The thing that throws me off though is that it HURTS you if you touch it, while Snide doesn't. Maybe it wasn't meant for a cutscene after all?
@birby100 Well I can't say I know much about how game developers organize the game models but I find it hard to believe Re-Koil would have been anything more than a standard enemy (since that is what he was in DKC3). Maybe during early development, they might have stored larger character models as standard? If it was a model made during earlier development the only other reason I can think of is if it was some kind of enemy intended only for Tiny Kong and her 'shrunken' bonus stages.
It's neat seeing unused sprites and such.

The lantern fish was probably supposed to be the fish that follows you to give you light in the sunken ship.
