what happens if i skipp out on the honey? i dont like adding sugar to my baking especially if there is fruit. also what do u think would happen if i added guar gum and xanthaum gum?
@o00thunderhawk00o I think it would be fine without any extra sweetner. You might want your bananas super ripe (peel completely brown) if you want the bread to have a light sweetness. I don't think you need the guar gum or xanthaum gum. The bread is really dense and stays together pretty well. It's one of the most bread like recipes I've found. Enjoy!
@Maiiven okay thanks, now how do i ensure that it rises? every time i bake with coconut flour it never rises. what's a basic coconut bread and/or muffin recipe that works (no type of flavor just a plain recipe i can add my own stuff to)
@o00thunderhawk00o I'm sure you could remove the banana from this recipe and have a nice simple bread. The baking soda and baking powder give it a slight rise but I have yet to find a nut flour/coconut flour recipe that rises like a traditional gluten bread.
