This happens because, as the wheel turns towards the man, angular momentum points to the right. When he pushes with his finger a torque is generated. When he pushes in the left side the torque points down, and when he pushes in the right side the torque points up.
The precession makes the angular momentum wanna chase the torque, so it twists.
@MrCerialKiller Actually, I wrote that down wrong. I meant to say at speed, push forward on the right handle bar and the bike will lean and turn also to the right. At slow (parking lot) speed, this does not happen because the gyroscopic effect from the front wheel is so low, it does not come into play so you steer it like a bicycle.

That's exactly how you steer a sportbike at speed. Push on the right handlebar and the bike goes left. At low speed it's the opposite.
