  • There is something so incredibly awkward about her.

  • I think my favorite part of watching these shows is it shows you how paranoid we've gotten about raw food (and rightfully so in many cases). She's just putting her bare hands all over that poultry like "I don't give a fuck".

    She is making a joke, like it is a beauty contest and the roasting chickens measurements are 14 15 14, like a beauty contestants in older days measurements were announced 36, 24, 36. I don't know the original date-guess it is mid 60s. She looks to be around 50 ish or so plus years old so dates in the mid 60s would work out.

  • When the show was first on, she was so stiff and uncomfortable, but you can tell that this was after she'd become used to being on camera, and was more relaxed and herself. She had a huge sense of humor and loved to goof around, and that's very evident from this clip. I learned to cook from her book "The Way to Cook" but everything she wrote is fabulous. An amazing woman, a true American original.

  • What?? That comment makes no sense on many levels. The skin is yellow. So, we suppose, is the fat. All animals have some fat. That fact has no relation to health food stores! You could always have photography that doesn't show real, natural colors if that makes you happy, yet uninformed.

  • Nobama, why don't you see for yourself? Go to the supermarket and buy a chicken, then go to a health-food store and get a free-range chicken. The difference is visible to the naked eye.

  • This is a fabulous video, but why can't we see the whole thing, and where can we go to see it? I'd like to know the differences between the older chickens, I mean, what difference does a few months make in the life of the modern chicken, even if they're really free range?

  • Hedablinka, older chickens develop a stronger flavor, much bigger legs, much smaller breasts, and if not stewed or fricasseed, are too tough to eat. However, their taste is much superior than their younger sisters because they've had time to develop their flavor.

    By the way, the caponette (the fourth one mentioned by Julia in this video) is no longer legal to sell, and hence have completely disappeared. Artificially enlarged with estrogen, they were shown to increase human's risk of cancer

  • Why are the caponette chickens illegal? When I first watched this, I asked my mom about it & she told me she had an allergic reaction to it but I dont know why. I havent found anything online about them.

  • Caponettes had a pellet of an estrogen compound stuck underneath the skin, which caused the chickens to grow quite a bit larger.

    Unfortunately, they caused cancer in humans, so they were

    banned.

    You can still buy capons (the caponettes' brothers), but even they are becoming rare.

  • It depends on what is in the chickens diet. If its yellow chances are they were fed a corn based diet

    Actually, the more grain the whiter the flesh and yolk. The more grass and forage, the yellower the flesh and yolk.

  • @1doedoe actually a lot of chicken and pork today are bleached of the natural yellow color. The organic all natural movement has now incited a return to non bleaching. You can find some all natural (yellow in colour) chickens at markets that provide all natural meats.

  • @1doedoe Not necessarily. Another cause of yellow skin is marigold flowers ground up in the chicken feed. It's a common practice in the US. Apparently yellow skin is more appealing than white. They both taste the same to me.

  • The chickens today arent yellow ecause we bred chickens (and pork) to be leaner. The yellow is the fat right beneath the skin. This means chicken taste more bland today than it did several years ago.

    You can still get a yellow chicken at either a farmer's market or a health food store. Their taste is much superior.

  • REL, supermarket chicken has been pumped full of growth enhancers; this chicken grows too quickly to develop any fat. By contrast, a free-range chicken—and especially a heritage chicken, if you can find them—have time to grow, and develop plenty of fat. You'd be surprised at the difference in taste.

  • The yellow isn't the fat. It is the diet the bird is fed.

  • @dustymew That is because, organic diet have been fed to the chicken. I am on organic food student, so as taught in my class an organic chicken has yellow skin whereas a conventional chicken has white skin.

  • I think it's to do with the age and size of the chicken. Definitely the older ones at the end are for stewing because they're tougher.. notice the smallest is the "broiler", it's the quickest to cook because it's so young and small.. not an expert, but that's what I think...

  • NawsChicky  roasters have a higher fat content and makes them better for roasting and or rotisserie. They usual run around 2.5 to 5 lbs each and are up to or around 8 months old.

  • erm Gloria, no one will Ever get Julia Childs voice compleatly well, because she had a very especific tone if you notice. But i think Meryl Streep did a outstanding job on capturing Julia's most important features and ALMOST the same depth in her voice...
