Wow...this looks lovely! I was just thinking that I have fallen off my healthy eating wagon and that I need to find something to get me motivated again... I haven't eaten raw eggplant but you made this look really good and I have had a salad with raw squash....
You might want to try stewing the eggplant down with tomatoes and onion with some cumin and a little nutmeg, cinnamon, black pepper (and other spices to your liking) and a pinch or two of brown sugar...
@starlamotivates It is quite good. I've got another one ready to come of the plant with a heirloom tomato and some banana peppers I got from the farmer's market. I'm looking forward to that salad. Let me know if you try it.
I love it grilled o saute' but never tried it raw. I will try this.
