Counting pulses and the motor controller is looming on the horizon! That'll be getting into the meat of things. For a real encoder it was suggested I have a look at the AS5040 or the GH3071-ND. Both cheap and readily bought online.
Thanks philbx1, I'm enjoying the journey, and dreading the post blues that comes at the end! The upside is I can then go on to creating 3D environments to drive the simulator ..ontop of mucking around using off the shelf games like LFS!

Cool. You can actually get a lot smaller detector/emitter pairs, which may help you to get even better resolution on the encoder.
