If you watch part 2, I've got a tip for you. When you are filling the pastry bag with icing, it's easier if you place it in a glass or a tiny bowl so that it is steadier when you fill the cone with the icing. It's less mess that way and quite easier than just holding the bag in hand.

I make my icing different I add cream of tartar for the egg whites if you don't add the cream of tartar your icing will be grainy,I also add flavoring to the icing which I noticed you didn't add these ingredients. I suppose everybody does it different.
I make this with vanilla flavoring, and add extra sugar to keep the consistancy, a hand mixer will work, but holy cow!! who wants to stand with it for that long?? with the stand mixer you can set it on and do something else....this is not good for icing a whol ecake, no! Just small portions and decorating, you cannot use water, it defeats the purpose, but you can use meringue powder if you don't like egg whites. People have been using egg whites for centuries.....
A Great Trick for Royal Icing to stop it going Hard and making it last longer is to add the Juice of half a Lemon and 2 Teaspoons of Glycerin just before adding the last bit of Confectioners ( Icing) Sugar. Although you need to add a little more sugar to get the right consistency. Its something my mom taught me and it makes it soft for Icing cakes and means it keeps for a longer time and tastes nice!

It's not as convenient as using a stand mixer, but takes about the same time. What's best about the hand mixer is you can move around the bowl if you see a certain part isn't mixed well.

I make my icing different I add cream of tartar for the egg whites if you don't add the cream of tartar your icing will be grainy,I also add flavoring to the icing which I noticed you didn't add these ingredients. I suppose everybody does it different.
