I really enjoyed watching that!! 2 Questions....1... Do you have to continously add some water while steaming them? 2...I don't think Nona Thelma took the centers out. Is it best to keep them in?
I just made the artichokes and they are amazing. I am so happy, my husband loves stuffed artichoke and mine were never great so I stopped making them years and years ago.
They are delicious. I think you might just add though, to keep the flame on low and to check them and add water as need to the bottom of the pan.

So is there any kind of sauce to serve this with? or do you just eat them as is?

Our cousins make theirs with tomato sauce on top. They add the sauce during the last few minutes while steaming so that it "soaks in."
