Every one else can post his own top 10 list, so we can know more chefs to visit during our trips. :). This is the cool part of it. It's true that Philly restaurants don't get the credit they deserve because New York, considered the USA's culinary capital, is so close. But it's up-and-coming. You've got Le Bec Fin, The Fountain Restaurant at the Four Seasons (formerly headed by Martin Hamann), and Vetri (by Marc Vetri), which Mario Batali called one of the best restaurants on the east coast.
Putting Escoffier on a list of Top 10 chefs is like a Christian putting Jesus on his personal list of Top 10 deities. Escoffier is THE best. Its understood. You don't even need to list him. Without Escoffier, there is no list. The other nine, as brilliant as they are, are directly or indirectly following a system developed by the chef-god Escoffier.
This list has too much of a French lean. It completely ignores the culinary brilliance currently happening in Catalonia and the Far East.
what about Pierre gagnaire,trotter,Adria,Achatz,and one of the greatest French chefs on the fucking planet Jean Banchet! this clown needs to cut his fucking tounge off.
Im a patissier (pastry chef) so i really have no say on what makes a chef good because i deal with pastry. however i did graduate from the CIA and live in paris so i know a lot about food. Other people keep bashing the French,I will agree that many chefs in other places such as Asia have many great chefs.But the truth is, the second anyone picks up a chefs knife, they are in debt to the French, because without us, modern cuisine would not be as good as it is today.

While the French nobility were getting off filet mignon the peasants perfected less perfect cuisine and made it great. I should not even respond to this but, please, check your sources when you say such stupidity... Ramsay has a total of 15 Michelin stars (addition of all the restaurants he owns that have been awarded). The maximum you can get per restaurant is obviously 3 stars.

Your definition of chef is obviously quite limited, and therefore FLAWED.
That was my first impression, but then it seemed more appropriate to say that it's not so much that it's about white males as it is that it's so heavily biased in favor of French cuisine, just like Michelin.
There are phenomenal chefs in places like Tokyo, Singapore and Hong Kong who don't get the international recognition because they're Asian and doing Asian cuisine.

I actually think those were good choices...the French were creating great cuisine for centuries! As they have in the past many of the great French Chefs are Italian...why because after centuries the French now train the best in the world. alain ducasse is my favourite chef... i was for a while in abu dhabi at the beach rotana's finz sea food restaurant... is still the best sea food restaurant in middle east (official).i love the french kitchen! so delicious and fine... i'm a chef.
Regardless of what you see on TV or read in books, cooking is hard ass work. After 2 years of school and 10 years of work it was time to leave. If you want money dont be a cook or chef.

True culinarians will sacrifice everything for their profession. Inner strength earned from challenge and success is more rewarding than the initial paychecks. I completely agree with you Chess, im in the same position, after two years of school and 7 years working in the culinary industry I have become recentful to the fact of the endless hours, low low pay, and very little recognition. cooking is still in my soul and I still question whether I made the right decision to leave the industry...I would suggest to anyone thinking about a career in cooking to understand that "so-called" celebrity chefs/lifestyle really is not a true description of reality.

Agree. How can you argue with that list of names? But also, Joel Robuchon, Pierre Troisgros, Michel Guérard, and Roger Vergé are above Boulud and Jean-Georges in French cooking in my opinion.
