  • Wow you have some mad cooking skills! Ive never seen a carrot/onion chopped so fast! Are you using olive oil to cook the veg on hi? Ive heard that you should only use ooil for sauteing bc higher heat kills of the benifit of the oil. I thought u were using grape seed or some other oil for cooking vegs.   • Hi Maangchi, I'm an adopted Korean and a few of my friends (also adoptees) are planning a Korean dinner! I'd love to make job chae, but I'm not sure what kind of beef to use. Does it matter as long as it's sliced thin? Also, one of my friends is vegetarian. Could I half the recipe and use tofu in one and 1/2 the amount of beef in the other?

  • @smitla03 for japchae, actually you can use any cut of beef. I love to use skirt steak because it's chewy and tender. Your vegetarian friend can eat fish cake? I would use thinly sliced fish cake instead of meat for her. If she can't eat fishcake, use lots of different types of mushrooms: shiitake mushrooms, oyster mushrooms, white mushrooms..

  • @Maangchi i used to eat at a restaurant a japchae variation with shrimp, squid and baby octopus instead of beef, and it´s delicious too, do you know the name of that version? i don´t know the correct spelling but its something like hemu jobchae bap, i know that the word bap refers to the rices and the first one must refer to the seafood. see you later and thanks again.

  • @gryffindor76 yes, chicken is a good substitute. If you are a vegetarian, you can skip meat and use more mushrooms.

  • hi, i really appreciate your cooking lessons but i wonder why you use olive oil over vegetable oil. it's not traditional in korean cooking. is there a particular reason why you prefer it?

  • My sister in Law's mum used to make this for me all the time.

    I took my BF to try JobChae at a Korean bbq restaurant to order it and it was HorRible!(overly oily only had raw cabbage tiny specs of meat, too much black pepper & the noddles wernt even mixed together just placed on top of the raw oily cabbage)

    So after we left i immediately went to korean store to buy the noodles so i can make him REAL JAPCHAE!. Thanks to your video I can show him what these noodles should really taste like!

My Bf said it was much better than the restaurants japchea! he had like2 servings then 3 more tinny servings after o.O; .heehee. Your videos are easy to follow! I love em! :) Thank You.   • Jab chae is what I wanted when I was a child. I mean that is an ideal food for me. When I met job chae for the first time, I felt "yes! this is what I wanted!" It's a perfect dish and good nutrition with many vegitables!

  • @nahrut2 thats just the name of the dish but only the vegetables are stir fried. the glass noodle will lose its chewiness if it were to be stir fried.

  • @sugarbasil no, I don't think so. The noodles for japchae are very important ingredients for this dish. Check the forum "where do you find Korean ingredients" on my website. You may be able to find info about a Korean store in your area. If you can't find, leave your question there. Someone else may give you the answer.

  • @sugarbasil Sesame oil o.o is everywhere in asian market, western supermarket anywhere..its so common now just ask people :D around ^^ and yeah noodle for this recipe is really important its completely different from soba and spaghetti..

  • sure, it's Ok if you don't have them. I'm Korean and I usally don't add them either everytime I make jobchae. you can also add another vegetables you like. that would be an applied jobchae

  • i ate this yesterday at my (korean) friends house and loved it!!!!!!!!!! thats why i really want to marry a korean man so my mother in law can cook and teach me how to cook korean food lol

  • Stir for couple of minutes. Turn off the heat and add sesame seeds. Toss well and your dish is ready to serve. It can be served hot or room temperature. Frankly, I loved it hot!

    What is good about this dish, is that most of the ingredients are optional. So, use your imagination and create something you love out of vegetables you love.

  • Eggs

    Beat the egg, make an omelet. Julien and use as a topping for the dish.

    In a large pan heat sesame oil+olive oil and start stir frying julienned beef for couple of minutes in medium high heat. Add onions, carrots, mushrooms, bell peppers, scallions, garlic, salt, pepper. Let cook for a few minutes, stirring, until the vegetables are cooked but still a little crisp. Turn down the heat to medium low. Add noodles, spinach soy sauce and ginger.

  • 3. You can put spinach in a hot water for couple of minutes. Drain them, and then add it during mixing process OR

    4. You can stir fry ready noodles with spinach in a 1 Tbsp of sesame oil.

    I chose the first method.

  • (adding salt and black pepper to taste). Either way, do not forget to julien the meat :D

    Spinach

    There are multiple ways of dealing with spinach.

    1. You can add spinach while all the ingredients are being slightly stir fried. 2. You can add them during mixing process after the vegetables are stir fried.

  • Meat

    Tenderloin or sirloin is best for this dish. You can also marinate the meat for 30 minutes using 2 tbs of sesame oil+2 tbs soy sauce+2 cloves of garlic, minced+ 2 tbs minced ginger. By doing this you should cut ingredients listed in half IF you are stir frying everything together. If you are frying every ingredient separately, you should first make the sauce out of sesame oil+soy sauce+garlic+ginger. Use half for marinating the meat and the other half use as a dressing at the end

  • Directions:

    Cook noodles according to package directions. Usually, you drop noodles into boiling water and keep them there for 10 minutes. Take them out and rinse them in cold water immediately. Cut the noodles with kitchen shears to small pieces. This makes them easier to mix with other ingredients.

    Noodles

    If you are using dry shiitakes, soak them in cold water for 30 minutes and rinse well afterward. You can leave the mushrooms as they are but I like them cut in smaller pieces.

  • ■4 tbs soy sauce might need additional soy sauce for seasoning

    ■3 scallions, cut into 1-inch lengths

    ■1 egg

    ■green or red bell peppers- julienned

    ■Salt & black pepper (pinch)

    ■Sesame seed (pinch)

    ■3 cloves of garlic minced

    ■2 tsp of minced ginger

    *Julienning is a method of food preparation in which the food item is cut into long thin strips

  • Ingredients:

    ■12 oz noodle (Dang Myeon)

    ■10 oz beef julienned*

    ■5 oz shiitake mushrooms or Chinese black mushrooms

    ■2 medium carrots julienned

    ■1 large OR 2 small onions julienned

    ■6 oz spinach

    ■2 tbs oil (I used olive oil)

    ■2 tbs sesame seed oil
