Typically because of Turks who adapted some aspects of Mongol names, Khan which means great and wise leader, they adapted this title in their language. Let me shed some light on those who try to divide Persians: Azeri's are Persian; the word Azerbaijan means in Old Persian protected by fire, based on Zoroastrianism, which is also a Persian religion. It is documented that a fraction of the people of Pars (Persians) migrated to what today is modern day province of Iran named Azerbaijan, before the Turk invasion b/c of a great flood that took the life of many. The name of Azerbaijan was chosen b/c it was believed they would be protected in the Northern thus, meaning protected by fire.

Regardless of the Turkic invasion, there has been people in the North of Iran before the Pars. The North were Caucasian Albanian a Caucasus ethnicity , then Iranian groups came mixed, then Arabs came and mixed, then Turkic groups came and mixed, and thus this ended up creating them a new identity. But the reality is everyone in Iran is mixed and some people speak non-Iranic languages as well. So we shouldn't call everyone in Iran Persian. Iranian is appropriate, but not Persian.
