I'll do it your way but add more sweet vegetables, i.e. sweet potatos & parsnips. I'll also flavor the "balls" with scallions & herbs.

Those kneidelachs are much too fussy! They don't need all that seasoning shizzle, that's not what chicken soup and matzah balls is about! Fail.
