  • i have made the exact samething 4 days ago & till now the ginger is still off white as is & almost as hard as it originally was.....today i have got it out of the refrigerator & will see how long it will take to turn pink & softly lenient if it will ever

  • no, it turns pink when umesu is used for the soaking.. it is made by ume/plum's juice

  • @fou2 Ginger is about 3.99 a pound...vinegar and time probably adds to that. But making it yourself taste better in my opinon

    Pour the hot mixture of vinegar and sugar over the ginger slices. Cool them. The ginger change its color to light pink. Cover the jar and store it in the refrigerator.

    *Makes about 2 cups

  • 2 lb fresh ginger root

    3 cups vinegar

    2 cups sugar

    2 tsps salt

    Wash fresh ginger root and rub off skin. Slice the ginger thinly salt them. Leave salted ginger slices in a bowl for one hour. Dry the ginger slices with paper towels and put in a sterilized container/jar. Mix rice vinegar and sugar in a pan and bring to a boil.

  • You're quite welcome. This is a very good recipe and quite easy to make.

  • It will taste like anything thats pickled. More of a vinegar taste as opposed to a wasabi pickling taste that you may be thinking of. Try it. Its very cheap to make. I actually sometimes add more rice vinegar. tasty.

    and boil without water, is it okay?
