@spikeboy101 You probably knocked the other two around too much when putting them into the oven. Souffles are a fickle bunch, bitches the lot of them, and they're very sensitive. There is also the humidity and all that jazz. So if not all of them rise, don't worry, as long as they're light and tasty.

Because the tray he had in the oven was preheating with the oven! That way the souffle's start to cook immediately and do not have to wait for the cold tray to heat up!
It's easy to overlook this small but important detail, when watching this video (at least I did). He's putting the ramekins on a preheated sheet pan; that way the souffles are cooked from underneath, which gives them that extra boost.
I love 7:42. GR is such an actor. He's quite good actually! Love the music too as he says "say uh little prayer"! LOL! reminds me of like music from the batman or greenhornet series in the 60's.

Well, Ramsay is still the headschef of the restaurante, which means he can still have the stars.
Or, the restaurants might be Ramsay's but who really has the starts are the Chefs on the restaurante whilst he's away.
