@jujutubes I've recently discovered baking all things, even lasangna, with parchment paper , it works very well to prevent stick and makes clean-up much easier. How did Noreen's brownie reciepe do?
@mompm Thanks for the parchment paper tip. I will definitely be getting some of that real soon. I have yet to make the brownies. I will be making them this week though (we're out of macaroons lol)... I'll let you know how they come out. I'm sure they'll be delicious! :)
@GettingThereGreen YES! I will also suggest that if your coconut is very long, run it through the food processor to make it smaller. Also keeping them in a plastic container will make them stay moist, they will be sticky, but they will be delicious. I put them in cupcake papers after I made them to keep them from sticking together. If you make them smaller, you can use the little candy papers. I hope you enjoy them! Noreen
Hey Noreen tip for you and your viewers If you don't have sweetened condensed milk you can use items from your food pantry to make it....1/2 cup boiling water 1 Tbs butter 1 Cup instant milk powder and 1 Cup sugar put in a blender and mix thoroughly it will thicken as it cools and use it in your recipe. I used it in your cream cheese brownie recipe worked great. and its cheaper.
if I wanted them covered in chocolate, how might I do that? LOL I can't imagine eating plain macaroons with chocolate. will the packed balls be packed tightly enough to then roll them in melted chocolate before putting them in the oven?
@GettingThereGreen Bake them first then cool completely then melt some chocolate chips in the microwave and dip the cooled macaroons in the chocolate either the bottom or just drizzle over the top. But it wont work if you try to put the chocolate on prior to baking. Thanks and I hope you enjoy them, they are super easy! Noreen
@atticus9799 I'm not a big coconut eater myself but others in my family do like it so I think I will try this recipe... but I'll dip them in chocolate as well so I'm more likely to want them myself LOL. Thanks for such an easy recipe. I like recipes with just a few ingredients. ~Amanda

I also thought that that the coconut might get too cut up, but then after making this particular batch I thought that this coconut was SO long that it could have been run through the food processor to get smaller. I think the big mixer would be good, but a hand mixer might not work so well.

@mompm I did not find one bit of difference! They tasted, cooked, looked and smelled the same and had the texture that I am used to. The only difference is there is less fat! Who could complain about that? I hope you are successful and I hope you enjoy them. Noreen

Looks delicious! - the local food market makes tubs of these but I want to recreate them at home. They dip the bottom of the cookies in chocolate: would you wait until they have cooled or dip them right away? thanks.
@goldengirl67 Yes, I would remove them from the pan to a wire rack and cool them completely. They I would dip the bottoms in chocolate, OR I would just drizzle them over the top with chocolate. You could cover them entirely and make your own mounds bars.
