The technique of flipping the stone into the proper hold can be used to deceive opponents by holding it incorrectly and then flipping into correct position. This works best if you are trying to hustle them.

Yes. The reason you place it with the stone between your index and middle finger is because that gives you the ability to place it without touching any other stones on the board.
He also takes the stone out of the bowl incorrectly. If I recall correctly, you're supposed to pinch it between your middle and index fingers to start with, rather than take it out in a "beginner's grip" and then transfer it to the correct grip.

if you place a stone in the middle of 4 stones you can't place it gently. you're forced to drop it. unless your board is big enough to accomodate the width of the stone and your finger, but most boards are just big enough for the stones.

Picking with you thumb is easier. Moreover, placing the stone with your index and middle finger, you avoid messing the touching stones. And finally, this way is far more esthetic than rest :).
