@TheRocketSilo I always do that too, but in this case the dough was unusually dry and just crumbled. I needed to press together the dough with my hands to mix it together. I was unsure when I began but it turned out in the end.
One tip with this machine is do not put your dough through the roller only once but fold it over on itself a few times re rolling it. This helps to activate the gluten more and create a silkier pasta as well as a better looking pasta once it is cut. Be sure to lightly flour the rolled pasta each side before cutting into shape.

@angelovestea I filmed a second part to this video but haven't posted it yet. I dried my pasta for 30 minutes. I just hung the pasta over the top of my mixer to dry and you need to make sure you cover tightly and store in the fridge until ready to use. You will likely want to use these within a week of making them. I hope that helps!
