Ceylon Cinnamon is something to consider. You can find it on Amazon. I'm hearing a lot of the other cinnamons are being used as prep products for rat poisons so that may answer why some of those cinnamon products break down to an almost gelatin consistancy. I like the cinnamon sticks as well.
