I have enjoyed Turkish kebabs for over 25+ years, but it was only recently I had the chance to sample Greek Souvlaki.

I said it was good but needed Chilli Sauce, the server said:

"No hot sauce, Tsatsiki goes on souvlaki"

I felt like saying that is why your greek version is inferior - but I didn't.

@boxintuff just buy a bottle of olive oil, but greek ask for: extra partheno eleolado(έξτρα παρθένο ελαιόλαδο),then you'll need some good tomatoes, biological i suggest, some cucumber, onions a green pepper and you'll need white greek cheese what we call: feta(φέτα)(notice that not all white cheeses are good, so make sure you buy from a greek village and ask for their best cheese, otherwise they'll give you the worst 'cause you're a tourist).Then add some salt and oregano and you're done!

Pork Shoulder makes the best souvlaki. It takes a while to clean it but in the end the added fat in the shoulder makes for a much tastier and more tender meat. If you use pork loin or pork tenderloin it will be a bit on the drier side. For chicken I recommend using thighs instead of breast as breast get to dry.
