Older cows like what you are talking about are sold as very low grade beef, They are used in canned items, the meat is undesirable. I eat Offal anytime I am at a resturant that serves it, I have had any that I didnt like. Food will never be what it was in the golden age, it sad.

I personally love eating different kinds of food as long as they don't poison you or kill you. Pig tongue with caramel sauce and cinnamon has a rich flavor and I absolutely love it.

Chef Cosentino, I salute you. Hunters and local butchers are some of the most conscientious conservationists I know. Too many people have the wrong idea. I'd rather have meat from an animal harvested from nature who's lived a happy animal life than devour some poor beast who's lived a life in squalor and fear and horrid conditions.
