I used to work part time in a butcher shop, and although I never cut any of the meat myself, I can tell that she is doing a horrendous job here! The poor piece of meat looks shredded at some parts and she doesn't know how to use that knife. I got the Cleavning book for X-mas, but this makes me feel quite unmotivated to read it!.

if you read the book cleavings you will discover that the author is a cold unfeeling self centered scum bag(literally) i cant believe the pain she put her husband through. it was not a valid process as she states if you are adult and care @ another person you dont do that to them. she is a good author but i feel sorry for her husband. show some spine man kick her to the curb no one deserves what she did to you for no apparent reason other than her self centered feelings.

@williambrodie pretty sure it's the part of the pig that bacon comes from, iirc the back. To make bacon, they just slice it perpendicular to the layers.
