Meat that tender is anything but chewy. Add to that the thin slices.

You can see the meat changing shape both before the pan and in it, all due to tenderness.

Guys, before commenting "Oh, IT'S RAW'' or "Cook the meat for f sake'' - Look on the title, it says Beef Carpaccio/Capaccio, Copy-Paste the title to Google Image, and then there we go, IT IS MEANT TO BE RAW that is the way the dish suppose to be. Didn't know before? Well now you do. So leave your rubbish comments out of this video.

Wow, there is a lot of animosity here for something that is completely subjective. I personally don't much care for beef carpaccio but I don't think someone is an idiot just because they like it. It is a matter of personal taste and the only stupid thing that you can say in responds to a recipe for it is an insult to people who disagree with you.

I can do squash for something seasonal. I can even do the chestnuts. Beef? good (when cooked). Mustard dressing? alright I guess... But all of that together? seems exceptionally disgusting.
