Firstly, this is only possible in very fresh frog legs. it happens because of how muscles start to contract. Sodium ions, which must exist in this salt I suppose, on a very fresh muscle, will cause a small electric charge to go through the leg, which triggers some other stuff and causes muscle contraction.
